Lemon Cake

280g     sugar (light raw cane)

250g     yoghurt

1        lemon (zest of)

80g      lemon juice

250g     flour

100g     oil

1 tsp    baking powder

1/2 tsp  bicarbonate of soda

1/4 tsp  guar gum (optional)

pinch    salt

METHOD

Heat the oven to 180C

Mix the sugar and yoghurt

Add the lemon zest and flour, mix with a wisk

Incorporate the lemon juice and the oil

Add the baking powder, bicarbonate of soda and the guar gum

Grease a cake tin with a little oil

Bake our 40 to 50 minutes at 180°C
