Mushroom Rolls
INGREDIENTS
1 onion diced
50 g celery diced
1 clove garlic minced
400 g mushroom diced
2 tbsp oil
1 tsp dried thyme
2 tsp mustard
2 tbsp cider vinegar
1 tbsp pumpkin seeds
1 tbsp sunflower seeds
1 tbsp flax seeds
salt and pepper
60 g bread crumbs
250 g puff pastry
1 tbsp coconut oil
10 g sesame seeds
METHOD
preheat the oven to 200°C/390°F
fry the onion, celery and garlic for around 5 minutes until soft
add the mushroom and dried thyme and cook for around 10 minutes
grind the seeds and add as mushrooms are cooking
add the mustard and cider vinegar
adjust the seasoning
off the heat add the breadcrumbs
cut the pastry into 2 oblong pieces and add the mixture. fold over the pastry and seal into a roll shape
brush the top with melted oil, and sprinkle with the sesame seeds
bake for around 15 to 20 minutes until golden
