Carrot Cake

INGREDIENTS

400 g  flour

200 g  ground almonds

400 g  sugar

2 tsp  mixed spice

1 tsp  cinnamon

1 tsp  bicarbonate of soda

2 tsp  baking powder

1 tbsp  apple cider vinegar

250 g  carrots  grated 

100 g  raisins

600 g  almond milk

100 g  coconut oil

#icing

250g cashews, soaked overnight (or for at least 4 hours)

7 tbsp  maple syrup

2 tbsp  milk

1 tsp   cinnamon


METHOD

Heat the oven to 180C

Mix everything

Bake for 40 minutes

Leave to cool

For the icing blend everything together
