Cashew Cream

INGREDIENTS

150g [1 cup] raw cashews, soaked in cool water for 8 hours (or in boiling water for 1 hour)

½ - ¾ cup water

2 cloves garlic, roughly chopped

½ tsp salt

2 tbsp nutritional yeast

2 tbsp lemon juice

Pepper

½ tsp onion powder (optional)

Variations

GINGER-SRIRACHA

To basic recipe add

1 tablespoon fresh grated ginger

1- 1 ½ tablespoons Sriracha

1 teaspoon maple syrup

ROSEMARY-MISO

1 tbsp miso paste

1 tsp mustard

2 tbsp olive oil & 4-5 large rosemary sprigs

Note: cook rosemary in the olive oil, then discard the rosemary

CILANTRO-LIME

To basic recipe add

  • 3/4-1 cup coriander leaves
  • 2-3 tablespoons lime juice (instead of lemon juice)
  • 1-2 chopped jalapeño peppers
  • 1/4 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin

Red Pepper

To basic recipe add

1 roasted red pepper

Ranch

To basic recipe add

1 tsp dried dill

1 tbsp apple cider vinegar

½ tsp paprika (smoked paprika works too)

Optional (good with mexican food)

½ tsp cumin
