ingredients :

75 g raw cashews - soaked in hot water

120 g water

1 onion - finely diced

2 garlic cloves

1 red bell pepper

120 g tomato sauce

400 g firm tofu

1 tsp ground cumin

1 tsp smoked paprika 

1 tsp Italian herbs

1/2 tsp  tabasco sauce

parsley

salt to taste

10 small tortillas

method: 

preheated oven to 200 C

 Sauté diced onion until translucent

Add crushed garlic and bell pepper and cook for about 7 minutes.

Add tomato sauce, tofu, spices and herbs.

Add the cashew sauce (blend cashews  and water until smooth)

Spoon about 2tbsp filling onto tortilla and roll.

Place to a baking dish and repeat with remaining tortillas. 

Drizzle or spray with a little oil.

Bake for 25 minutes.

400 g  zucchini - (2 medium)  - grated

1 tbsp flax seed meal

3 tbsp water

fresh herbs - like dill or other

2 garlic cloves - minced

160 g chickpea flour

salt  and pepper to taste

olive oil

method: 

❗Squeeze liquid out of grated zucchini

Mix everything is a bowl

Make around 6 patties
